Chickpea makes a lot of my favorite foods come true! Hummus, falafel, Chana Masala, and recently--pizza and blondies!
A few days ago I saw a recipe for Booyah BBQ Socca Pizza and I was drooling over the pictures! So I gave it a whirl...
The only change I made to the recipe was to add a pinch of baking soda to the batter, and to reduce the oil. I also did not have barbecue sauce or the ingredients to make my own.
Instead, I topped the crust with a thin layer of A1 sauce, then with a larger amount of tomato sauce.
I added mushrooms, red onion, and broccoli to the sauce before broiling, then added nutritional yeast before eating!
Behold the wonders of chickpea flour!
My next socca pizza had the same sauce I used before, and red onion, broccoli, and leftover nutty sweet potatoes (recipe soon!) as the topping.
I think this crust would be great with a Hawaiin twist too- pineapple and roasted peanuts, anyone?!
I also tried out Katie's recipe for Chocolate Chip Blondies (They're good for you) made with...what else? Chickpeas!
I didn't have ground flaxseed, so I subbed in chia seeds. They were a bit "seedy" because of the chia, but once I got past it, they were delicious! I may try them again with oat flour in place of the flax or chia.
Perfect straight out of the oven with a glass of coooool soymilk.
