It's about to be finals week here in the land of the Romaine so I've been doing a lot of school work lately. Fortunately, I had a fabulous weekend with some of my favorite girls!

There were high school students all around us...and middle schoolers...we felt old!
Luckily we made it inside just before it started raining.
The opening DJ was great and we danced a ton.
That was the best I could do...
Far East Movement was really good too! It was sooo crowded though, and we were surrounded by drunk underage kids. I think I'm too old for this kind of stuff!
So, we left before Mike Posner took the stage and hit a bar!
Played some pool...
And then headed to my apartment for some more fun (and snacks!)
It was great to relax before a tough week!
Finals week is usually the time that everyone starts getting sick. Especially with the rainy cold-then-hot weather we've been having lately, a lot of people around me have been coughing and sniffing.
Luckily, I've got an immune system-boosting recipe for you!
Garlic has been found to have antibacterial, antiviral, and antifungal properties. I'll take it!
Garlicky Lemon Cannellini Bean Dip adapted from Giada
1 Can Cannellini (white kidney) beans, drained and washed
2 garlic cloves, minced
juice of half a lemon (about 2 TBSP)
2 TBSP olive oil (or as needed)
1/2 TBSP dried parsley (fresh would be better, if you have it!)
sea salt to taste
Combine everything but the olive oil in a food processor and pulse. Drizzle olive oil in until you achieve a smooth consistency.
Enjoy!
Warning: Be prepared to have super intense garlic breath after eating this! If you're worried about this, you could cut the garlic to one clove. But, I love garlic so I didn't mind!
I don't think my classmates agreed though...I brought this to school in my lunch today and my professor said she could smell the dip all the way down the hallway. Oops.
I will be eating this at home from now on :)

Bahaha, I didn't think it smelled bad, it was quite strong though. I thought it was amusing that you thought the smell was emanating solely from your mouth though...I'm pretty sure it also had something to do with the garlic dip in the container, haha. And I have a sore throat...and can't cook...should I just, swallow a clove of garlic or something? Yeah?

When I was studying abroad, we put tons of it in everything, and definitely spoke often about the garlic hangover - when garlic pours out of your pores the next morning - because it happened to us all the time. Luckily, we were all guilty of it, so there was no judgment!

ReplyDeleteMy boyfriend and I went to a Devil Makes Three concert a couple months ago and we were like the oldest people there. It felt so strange! Teenagers are scary!

haha- I pretty much have garlic breath all of the time, even with my lunches at work, so I'm not scared!

ReplyDeleteI LOVE garlic!!! It's so funny though because I forget sometimes that not everyone does. This past weekend I made the Peanut Passion Sauce from Eat Drink & Be Vegan as an appetizer (dip for veggies) for my fiance's family's Easter party...and I had to keep warning everyone that it contained a whole lot of raw ginger and garlic! To me it was perfect though :)

I'm SO jealous of you getting to go to the Far East Movement and Mike Posner concert! I love their music! The last time I went to a concert was when I was 5 years old and it was a Aaron Carter concert. Hahahaha! I had quite the interesting taste in music. ;]
