Faux-Coa Krispies

Hi Friends! Wow, school is getting busy very quickly! Do not fear though... I shall always make time for you! 
I have always been the type of student that skated through school with minimal studying and reading for classes. As long as I paid attention in class, I was good to go on tests and homework! I have a feeling that grad school is going to be very different. So far I have done more reading for school than I think I have done in the past year... I'm not going to back down though- Bring it on, Clinical Psychology!
What kind of student were you/are you? 
One of my goals for the semester, aside from making good grades and doing well at my job as a graduate assistant, is to make time for myself. Over the past 2 years I have worked full time as well as gone to school and as a result, I neglected to give myself me-time. Whether it was making time to work out, paint my nails, read a magazine, or try a new recipe...I often shoved those things I wanted to do onto the back burner. 
So, a few nights ago when inspiration for a new dish struck- I ran with it!
Every once in a while I get a craving for sweet, sugary, crunchy cereal- the stuff I wasn't even allowed to eat while I was growing up :) Sometimes Raine gets Cocoa Krispies from the store and I always end up eating some more than my fair share. So, I decided to make my own!
Faux-Coa Krispies
Three Servings

2 TBSP unsweetened applesauce
2 TBSP Splenda (you could definitely use "real" sugar instead)
1 TBSP Hershey's Special Dark cocoa
1 TBSP Agave Nectar
3/4 TBSP Olive Oil (I am sure any oil would work)
1/2 tsp instant coffee (I used Nescafe)
1/4 tsp pure vanilla extract

1 Cup Dry Oats

Preheat oven to 250*
Combine all ingredients except for the oats. Taste it to see if you want more sweetness. Add the oats and stir very well, trying to coat all of the oats with the chocolate mixture.
Spray a baking pan with oil and spread the oats thinly onto it.
Bake for about 25-30 minutes, checking the oats every 10 minutes and breaking them apart so the clumps aren't too large.
Even if they still feel soft, turn off the oven and let them sit in the oven. They will continue to cook.
When they're cooled and crispy, transfer to a container:

And the stats:
And they're filling, too! I can't say that for most boxed cereal.
Side Note: Since when did apple sauce ingredients include high-fructose corn syrup? I had to search through about 4 different brands before I found one that didn't! Says the girl with the gallon bag of Splenda...

PS: They stayed crunchy in soy milk!

  1. That recipe looks delish! Natures path granola is my favorite cereal. Never really been a cold breakfast person. I prefer my brf hot, mostly.

    Study tip: Study in increments with breaks to freshen up your mind and stay away from the laptop if that is a distractor. Oh wait this was actually supposed to be a note to self!!

  2. My favorite kind of cereal seems to depend on the week :)

    My best study tip is to take a dance-like-crazy-to-your-favorite music break every 30 minutes break. I did this frequently throughout high school and college :)

  3. Oh gosh. . . I was a good student back in the day, but now my mind wanders so much! I would definitely say work out early in the day to burn off that fidgety energy so you can focus. I do this for work, and it usually helps!

  4. i have no study tips, i was a horrible student.. barely scraping by with a 4.0.. :P actually i took all fluff classes, so it was no surprise i did so well my last year of college. HA! i cant study, cant sit still long enough to make it work for me.. definitely a struggle!

    that actually looks pretty good girl! holy yum!
    UMMM HFCS is in everything.. dont you KNOW in moderation its good for you?!?!?! (sarcasm to the max right there..) they even put HFCS in baby formula.. which i dont think was there 8 years ago when my daughter was on it.. im def. not bottle feeding next time around!

  5. Clinical psych sounds awesome! I am majoring in psych and communications to become a speech pathologist. I love it! And I'm betting I would also LOVE your crispies =D

  6. I love the name of this Sonia...and I think Cocoa Krispies is such a guy thing because Ali loves the stuff. I might try to make this and see if I can fool him. :)

    I was never good at studying so I have no tips for you except to disable the internet so you aren't tempted. That wasn't such a problem for me way back when but now that the internet is everywhere it can be so distracting!

  7. Best study tip -- take breaks..every 30 minutes give yourself 5 minutes to focus on something other than studying.

    I love plain cheerios (well, okay, we buy the United Food Club brand) mixed with Kashi. Kashi is too sweet by itself.

  8. I have two study tips that I always give to students. 1.) Go to bed by 11 (I know it's lame, but works!) 2.) Write all your assignments on a month at a glance planner. I am an admissions counselor for degree programs for working adults. Going back to school is scary for people who work full time and have families and such. I get to do a lot of hand holding and counseling.

  9. Cereal:
    I really loved cinnamon toast crunch until I realized that it had milk in it :(
    Now instead of cereal I usually have oatmeal loaded with all kinds of goodies :)

    Study tip:
    Plan ahead!!
    Set aside specific times to study.
    If you 'forget' that you have a big test or homework assignment due the next day and its 10pm, you're going to be losing sleep, and no sleep = groggy brain.
