The latter half of this week has been awesome in terms of what I've been eating... Allow me to illustrate:
Wednesday evening Raine and I made nachos. I found some organic non-GMO blue corn chips on sale for $1.99 and pounced on them!
And thus was born:
slathered with vegetarian refried beans, and topped with chopped romaine, bell pepper, green onion, tomatoes, and extra hot salsa.
And if y'all know me at all you know I had to have a margarita with this:
I used Bethenny Frankel's Skinny Girl margarita recipe. It was not very good- it needed a little something sweet! I added a few drops of Stevia and all was well.

Thursday evening my boyfriend and I got the sudden urge to go to Schlotzky's for a sandwich. I hadn't been there in years!
I ordered the veggie on wheat with no cheese.
with a few rogue drops of Louisiana hot sauce on the side! I love their olive-y sandwiches.

Yesterday after work my boyfriend and I hit up the grocery store to pick up a few items necessary for pizza night. Pizza nights always turn out to be so fun! We need to do those more often.

I also forgot to take a picture of the item that made this pizza... Thank goodness for internet! I found it here.
It is an organic sweet basil pesto packet- you know, the kind you add oil and water to make the sauce. Instead of going that route, I sprinkled a few pinches of it all over my pizza sauce and it was amazing.
I also added a small amount of cheese before sticking it in the oven.
Then, I got some of this out:
mmm I love arugula! I rarely get it because it costs so much...but as I was debating over this at the store Raine said to me, "well, you'd pay that much for a drink, right?" And he was right. So the arugula was purchased :)
I took the pizza out of the oven a few minutes before it was done, added several handfuls of arugula and put it back in to bake for longer.
and topped it with a bit of parmesan when it was complete!
It was a masterpiece! Until disaster struck...
After cutting up the pizza I absent-mindedly unscrewed the lid of the crushed red pepper instead of flipping the cap open...
I probably dumped about half a cup of the hot stuff all over the pizza! I had to remove most of the arugula and I was was very upset :(
It was nothing a little sparkling wine couldn't fix, though!

I digress- let's get back to the incredible pizza:

it was still a little spicy, but very good.

Black Bean Brownies

I almost had another disaster with these... The batter was not wet enough so I added extra water, and thankfully I had the foresight to taste the batter before I stuck it in the oven- and blech! I had forgotten the sugar! I added the sugar and all was well.and thankfully, the recipe is very forgiving- good for klutzy cooks like me- the added water made no difference.
The only modification I made was to half the recipe because I didn't have a 9x13 pan- this is an 8x8 pan. I also subbed pecans for the hazelnuts because all I had was pecans, and because I thought it would be the Texan thing to do.I cut it into 15 pieces, and dug in:
These were soooo good! In the words of Christine, "I don't think I can accurately express over the internet how freakin awesome these brownies are! I said it before and I'll say it again: these are better than ANY brownie I've had, including the ones laden with tons of butter and eggs."
Make these now.

ReplyDeletethe last sentence about the brownies. Ok I have heard everything from the black bean brownies are amazing to they taste faintly like health food disguised as brownies. There are a few diff recipes floating around out there though. Honestly i want my brownies to be sinfully!!! good. As in tons of sugar, depth,density, richness of flavor, i dont want health food! if i did, id grab more broccoli :)
anyway thanks for the info on the recipe..maybe i shall make these...i am scared that i wont love them though!

Blame it on the Cuervo ;) That sandwich looks AMAZING! I'm so dying to do those black bean brownies...One of the best things I made recently was my barley-lentil stuffed baked tomatoes! Sooo repeat-worthy!

One time I made rice pudding without cooking the rice! So stupid, lol. I actually do wanna try the black bean brownies, or HEAB's squash/brownie mix recipe.

Hooray for three day weekends! I was off today too..pretty nice if you ask me! I've heard so many different opinions on black bean brownies. Most of them have been bad though. The batter looks super yummy though!

ReplyDeleteThe brownie batter does look delicious and SO rich but like Lindsay I have heard negative reviews on them. Not that I can eat them anyway unless I try to de-glutenize them. :) Seems like a lot of effort.

ReplyDeleteGreat looking pizza! I have never tried arugula on my pizza (or anything other than a salad) but I hear it's fantastic. I will try one day! Also those black bean brownies sounds fabulous. I made a similar recipe once but they didn't turn out quite as nice as yours.
